Homemade Baked Chicken with Spice Rub

Our version of baked chicken with spice rub.

David and I are the masters of “make-do” – creating delicious recipes out of whatever we happen to have sitting around the kitchen. Once in a while, we just get tired of eating the same old things and forego all recipes, just throwing in whatever sounds good at the time and hoping it will turn out good. Well, this was one of those “make-do” recipes that turned out pretty spectacularly, and the credit is all David’s! This recipe is all his own and he even typed everything up himself, so with no further ado, it’s time to share with you David’s first blog post and very own baked chicken and spice rub recipe!

Baked Chicken with Spice Rub

Ingredients:

  • Chicken thigh (3 pcs)
  • Onion (1 bulb)
  • Garlic (5-6 cloves)
  • Paprika
  • Crushed Black Pepper
  • Chinese 5-spice
  • Chili powder
  • Garlic Breading Mix
  • Olive oil (2 tbsp)
  • Fish sauce (3 tbsp)

Preparation: Make 3 slices in each chicken with a sharp knife to make wedges. Dip chicken in fish sauce for 1-2 minutes. Place the chicken on a plate and let the excess fish sauce to drip out. Start coating the chicken (especially inside the wedges) with paprika, crushed black pepper, chinese 5-spice, chili powder, and garlic breading mix. Amount of rub is to taste. Make sure chicken is coated thoroughly. Cooking: Pour olive oil on the bottom of a baking pan. Place chicken in baking pan and let cook in preheated oven for 15 minutes at 375 degrees Farenheit. While chicken is cooking, dice up onion bulb and garlic cloves. After 15 minutes, take chicken out of the oven and sprinkle the onions and garlic on top. Make sure to get some garlic in between the wedges. Put chicken back in the oven for another 15 minutes.

Serving: Once cooked, serve on a plate with a steaming cup of rice.
